There are two things going well in this recipe that will make people rush into your kitchen and steal some of these delights.
1. Do not bake the Hershey kisses--that's why they get hard as a rock and crumbly.
I bake the dough by itself and push the kisses into the cookie immediately
after taking them out of the oven.
2. Don't overwork the dough! You only need to mix the dough until just combined. Some recipes want you to really mix doughs/batters until fluffy and everything is really incorporated, but this is not one of them!
Follow these rules and believe me, you will want to make this recipe once a week =)
Yield: 7 dozen--I know it's a lot, but believe me, people will want to take these babies home with them!! (But feel free to cut the recipe in half)
Ingredients:
1/2 cup granulated sugar
1 cup light brown sugar
1 cup creamy peanut butter
2 sticks butter, softened
2 eggs
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon baking powder
Additional granulated sugar (little less than 1/4 cup)
7 dozen Hershey Kisses
Directions:
- Heat oven to 375 degrees F.
- In a large mixing bowl, beat first 5 ingredients (through eggs) with electric mixer on medium speed, just until combined.
- Stir in flour, baking soda, and baking powder.
- Place additional 1/4 cup sugar in small bowl. Gently shape dough into 1 inch balls. Roll dough balls around in sugar. Place on baking sheet lined with parchment paper. (If you don't have parchment paper, use an ungreased cookie sheet)
- Bake 8 to 10 minutes or until edges are lightly brown. Immediately add 1 Hershey Kiss to the center of each cookie. Cool a couple of minutes and remove to wire rack. (The chocolate will become very soft--so delicious directly out of the oven with the gooey chocolate! Once the cookie completely cools and sits, the chocolate will regain a firmer shape.)
