For my final Christmas cookie, I decided to post the recipe for Mike's great-grandmother's homemade almond biscotti. Mike's dad, Bob has been asking me to make this for a while and I finally tried it! Mike and his dad both thought that this recipe was lost for good, until Mike's grandma found it recently! Bob told me that he would go over to Ma's house (who was 100% Italian!) and she would always have cookies and baked goodies for her grandchildren. Around Christmastime, she would have this biscotti and fresh coffee ready for him to eat! He would dip it in his coffee while the canary would be chirping away! When Bob tried this after I made it, he said it gave him goosebumps because it tasted just like hers :) No matter how much you bake and cook, it's always rewarding to hear those comments! As a kid, I always looked forward to the gifts, of course, but I also enjoyed making cookies, like these Spritz cookies, with my mommy and heading to Lancaster for a week or longer to stay with my grandparents and uncle. My mom's sisters and their families come over for dinner, and we eat as many cookies and as much delicious ham dinner as we possibly can before we are so stuffed full of goodies! After we all clean up, we head downstairs (grandkids in order by age!) to open family presents and play crazy board games while we pass around the singing hat, eat more cookies and drink cranberry ginger ale and egg nog. Honestly, there isn't a better time of the year than when we are together as a family for Christmas. One of my favorites memories during Thanksgiving is taking our annual trip to Lititz, PA for a chocolate shopping spree at Wilbur! My Grandpa would always put together a few giant trays of assorted chocolate for Christmas...malted milk balls, chocolate covered pretzels, chocolate peanut butter truffles...the list goes on. Although my Grandpa was a dentist, he had the biggest sweet tooth there was! As he put the candy on the trays, half of it went in his mouth! I also remember a hilarious memory of Grandpa from a few Christmases ago. He had previously given everyone in the family a little glass cross. He said to keep the cross in your pocket everyday, and God will be there with you. As we finished opening presents, Grandpa said, "Ok, who has your cross? I have $5 for you if you have it!" We all thought he was kidding until he pulled out a giant stack of $5 bills! He had made my Grandma go to the bank and get some fives for him :) Even though my Grandpa passed away on September 25th of this year, we will remember all of his wit and humor and will cherish all of the memories we had with him. These Spritz Cookies are so much fun to decorate with my sister and mom! We like coming up with new designs, but sometimes we stick to the same ones every year. With the flowers (in the middle) we like to use a red dot in the middle of the flower and holly leaves on each petal. I also like using brown jimmies for the tree stumps and for the reindeer feet! Well...I basically wasted 22 years of nut-eating heaven, because these things are amazing. A couple of years ago, my poor mom was so busy working that she barely had time to make Christmas cookies. Of course, being the greatest mom that she is, she made all of my sister's and my favorite cookies and skipped making her favorites! I felt so bad, that I secretly made these nut rolls and brought them to our Christmas dinner for her. That was kind of the first moment where I thought..."wow, I can actually make good-tasting stuff!" This year, I decided to make half of the recipe with the walnuts that it calls for, and half with pecans. I was really interested to see how it would taste, and I love these with pecans! A few months ago, I was asked by Mike's Gram to try and make her mother's orange cookies. She seemed so sad that she couldn't figure out how to make the cookies exactly like her mom had. I was handed the recipe card, in her mother's beautiful handwriting. You know a recipe is good when there are splatters and stains of food all over it! What did surprise me, though, was the fact that there were barely any directions. The top of the card listed the ingredients, followed by the baking instructions, which were about 4 minutes off! It also said to dip the cookies in the glaze, coating well. After dipping the entire cookie in the glaze and making my mouth pucker, I realized that I needed to make a few changes to the recipe card :) If you are a lover of orange, fruity cookies, and cookies with a sugar glaze, then you will love these! Source: Great-Grandma Gail It's Pecan Tassie night! I have to admit--up until about a year ago, I despised pecans! The only thing that I would actually eat were my mom's Sugared Pecans. (Which she surprised me with last night!! So good!) I then grew to love Mike's Gram's Pecan Pie. Basically, these pecan tassies are like heavenly mini pecan pies! For Mike's birthday, my mom gave him an envelope of "coupons" for free desserts, handmade by Lynnie herself! Whenever he wanted brownies, the best chocolate chip cookies in the world, or pecan tassies, he could turn one in :) I honestly love the relationship between Mike and "Lynnie." We are both so lucky to have wonderful in-laws! I remember one day a few months ago, Mike came home with a giant round container that had only 2 pecan tassies left and a few crumbs. I had no idea that my mom made them for him, and his office had eaten all but 2! He said he had to save them for me :) Needless to say, everyone loved them!
