For dinner, I made my Slow-Cooker Pulled Pork and Red Skin Potatoes, and for dessert, I made the Peach Cobbler Ice Cream Cake!
Later in the month, my husband celebrated his 24th birthday with another Peach Cake and his favorite Honey Lime Chicken Enchiladas!
A week later, I was privileged to make dinner for Mike's Gram's birthday! She is the best cook in the family, so it was definitely an honor to make her favorite birthday cake--German Chocolate! I also remembered how much she loved the Cauliflower-Pasta Gratin :)

Cook Time: 25 minutes (cake)
Yield: approx. 12 slices
Ingredients:
- 1 box Betty Crocker Super Moist German Chocolate cake mix (my favorite brand!)
- Eggs, oil, and water as called for on box
- 1 cup sugar
- 1 cup evaporated milk
- 1/2 cup butter (1 stick)
- 3 egg yolks
- 1 1/3 cup flaked coconut
- 1 cup pecan chips
- 1 teaspoon vanilla extract
- 1/2 - 1 teaspoon shortening
- 1 ounce square semisweet chocolate
- Pecan halves (for garnish)
Directions:
- Prepare 2 9-inch round cake pans by coating with a thin layer of shortening and adding a round piece of parchment paper to the bottom of each pan. (I have decided to alter the recipe from how I originally made it, with 2 layers instead of the 3 in the picture above.)
- Follow cake mix directions for the 2 9-inch round cake pans. Bake as directed and let cool on a wire rack.
- For the frosting, lightly toast the coconut and pecans in a frying pan over medium-low heat, for a few minutes. Continue to stir so that the coconut does not burn. Set aside.
- In a medium saucepan, combine the sugar, evaporated milk, butter, and egg yolks. Cook over low heat, stirring until thickened. (Use the butter as your guide! Once it melts completely, you're almost there!) Remove from heat.
- Stir in coconut, pecans, and vanilla. Allow to cool until it is thick enough to spread.
- Spread the filling between the layers and on top. In a small bowl, combine the shortening and chocolate. Melt in the microwave 30 seconds at a time, stirring each time until it is a smooth consistency. Drizzle over the top of the cake. Add pecan halves for decoration. Enjoy!!
