I'm so fortunate that my bakery has really taken off! This upcoming weekend is going to be incredibly busy for me with a baby shower, my first wedding, and three birthdays. I couldn't be more excited, (nervous), and blessed to have an incredible customer base already!! These cookies will be used as wedding favors to celebrate the "little pumpkin" that is on the way!
If you are interested in having these cookies or any of my other baked goods for your next event, I'd be thrilled to be part of your special day!
Baking Time: about 30 minutes
Yield: 3 dozen

- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/2 teaspoon salt
- 1 stick butter, softened
- 1 1/2 cups sugar
- 1 cup pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract
Glaze Ingredients:
- 1 cup powdered sugar
- 1 1/2 Tablespoons milk
- 1/2 Tablespoon melted butter
- 1/2 teaspoon vanilla extract
Directions:
- Preheat oven to 350 degrees F. In a medium bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
- In another medium bowl, cream together butter and sugar until light and fluffy. Add pumpkin, egg, and 1 t. vanilla and beat until creamy. Mix in dry ingredients until just combined.
- Using a Tablespoon scooper, place 12 scoops of dough on baking sheets lined with parchment paper. Bake 15-20 minutes until no longer shiny on top. Allow to cool 5 minutes before removing to a cooling rack.
- To make the glaze, whisk together powdered sugar, milk, melted butter, and 1/2 t. vanilla. Drizzle over cookies with a fork or pastry bag. Enjoy!!
