The only downside to this recipe is that it calls for a container of Philadelphia cooking creme (Italian Cheese and Herbs), and I was unable to find this in several stores where I looked. You might have better luck, as long as they still make it! However, I decided to make my own cooking creme from scratch, which was really not that much more difficult!
This meal can also be made as just a pasta dish without the chicken. Either way, you should definitely try this!
Yield: 4 Servings
Ingredients:
Chicken & Pasta:
- 6 chicken tenderloins
- 4 cups corn flake crumbs
- 3/4 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup milk
- Olive oil
- 1 pound bowtie (farfalle) pasta
Sauce:
- Philadelphia cooking creme--Italian Cheese & Herbs or next 4 ingredients:
- 1 package (8-oz.) cream cheese, softened
- 1/2 cup chicken broth
- 1 Tablespoon Italian herbs
- 1 Tablespoon grated parmesan cheese
- 2 cans cream of chicken soup
- 1 cup chicken broth
- 1/2 cup milk
Directions:
- (skip this step if you find the cooking creme) Heat cream cheese and broth in a small saucepan over low heat, until melted. Once smooth and creamy, add Italian herbs and parmesan cheese. Set aside for use later.
- Set 3 shallow dishes in a row for your "assembly line." Pour milk in the first one, flour, salt and pepper combined in the second dish, and corn flakes in the third dish.
- Dredge chicken in milk and then flour and place on a paper plate. Once all are dipped, place in the freezer for 5 minutes, so that the coating will stick. Remove from freezer and dredge in milk, then corn flakes.
- Heat a skillet with olive oil over medium heat. Add the chicken pieces and cook each side about 5 minutes. Make sure the chicken is able to cook through before burning the coating. (Turn the heat lower if necessary!) While chicken is cooking, boil water for pasta. Add plenty of salt to keep from sticking.
- Remove chicken when heated through and set aside. Keep warm. Cook the pasta and drain when finished.
- Meanwhile, in the same skillet you cooked the chicken in, make the sauce. Add all sauce ingredients and whisk together over medium heat. It will all combine into a smooth, creamy mixture in only a few minutes!
