I remembered when I made oatmeal raisin cookies and my dad said how good they would be with peanuts, since that's what his mom always made when he was younger. So I figured - the best of both worlds! Let's put peanut butter chips in these instead! The result is perfect :)
If you would like, you can substitute the peanut butter chips for peanuts or you can do a combination of both! Let me know what you like in your oatmeal cookies!

Ingredients:
- 1 1/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 sticks butter, softened
- 3/4 cup sugar
- 3/4 cup packed light brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 cups quick or old-fashioned oats
- 1 2/3 cups (11-oz. pkg.) peanut butter morsels
Directions:
- Combine flour, baking soda, salt, and cinnamon in a medium bowl. Set aside.
- In a large bowl, cream together the butter and both sugars until light and fluffy. Add the eggs and vanilla and mix well.
- Gradually beat in the dry ingredients, then stir in the oats and peanut butter morsels.
- Chill for an hour to prevent cookies from becoming flat, or you may bake right away.
- When ready to bake, preheat oven to 350 degrees F. Line trays with parchment paper to prevent cookies from sticking to the pans. Drop rounded Tablespoons of dough onto the prepared pans. Bake for 10-11 minutes.
- Allow to cool on trays for 5 minutes before transferring to a cooling rack. Enjoy!!
