That gave me a solid reason to make homemade pulled pork for our weekly family dinner without having to make him or his pap a completely different meal!
The most astonishing moment of dinner was when he actually went for seconds...and not just seconds of the pasta or potatoes, but of the pork! I was a happy wife :)
I have been wanting to slow-roast pork for a while, and this was a definite win of a recipe! What made it even more fantastic was the delicious BBQ mop sauce that went with it. I made a recipe of Emeril's barbecue sauce, and I followed it to a T. When I tasted it, it was way too strong in vinegar and ketchup. I altered it quite a bit to make it more to our liking. Try it, and I think you'll enjoy the sweet and smoky flavor!
Also, if you don't know what a "mop sauce" it is a much thinner type of barbecue sauce that was originally "mopped" on top of a slab of meat. President Johnson used to throw parties for hundreds of people and he used a real mop to slather on the tasty sauce! A mop wasn't required for my cooking, but I do love the smooth and liquid-like texture of this sauce!
Slow-Cooker Pulled Pork:
Inactive Cook Time: 5-6 hours
Yield: 6-8 servings
Ingredients:
- 1 teaspoon vegetable oil
- 1 (4 pound) pork shoulder roast
- 1 cup of your favorite barbecue sauce
- 1/2 cup apple cider vinegar
- 1/2 cup chicken broth
- 1/4 cup light brown sugar
- 1 Tablespoon prepared yellow mustard
- 1 Tablespoon Worcestershire sauce
- 1 Tablespoon chili powder
- 2 large cloves garlic, minced
- 1 1/2 teaspoon dried thyme
- 1 large onion, chopped
Directions:
- Pour the vegetable oil into the bottom of a slow cooker. Place the pork into the slow-cooker
- In a small bowl, combine the barbecue sauce, vinegar and broth; pour over the roast.
- In another small bowl, combine the brown sugar, mustard, Worcestershire, chili powder, garlic, and thyme. Spread over top of the pork. Mix in the onion.
- Cover and set the slow-cooker on high for 5-6 hours. (I flipped the pork once or twice during the cooking)
- When the pork is finished cooking, remove from the slow-cooker and shred with 2 forks, discarding as much fat as you would like. Put the pork back into the slow-cooker and stir with the remaining juices.
(I served the pork as a platter, but this would also be delicious as a pulled pork sandwich!!)

Homemade BBQ Mop Sauce:
Yield: approximately 3 cups
Ingredients:
- 3/4 cup apple cider vinegar
- 3/4 cup ketchup
- 1/3 cup packed dark brown sugar
- 2 Tablespoons molasses
- 1 Tablespoon yellow mustard
- 2 Tablespoons honey
- 2 teaspoon liquid smoke
- 1 Tablespoon onion powder
- 1 teaspoon salt
- 1/8 teaspoon cayenne
- dash of black pepper
